Getting tired of the same old mashed or baked potatoes? Want to try something new for Christmas dinner? Here is a new, fun method that can spice up your experience with potatoes. Potato Casserole. This dish is extremely tasteful, creamy, and delicious. Always having this dish on Christmas Day is a family tradition for my house. I love the Potato Casserole dish so much that I always want to have it every day. This dish is especially good for leftovers as well. If you want to experience a new dish involving potatoes, follow the simple recipe below!

Ingredients: 

– 1 pound of frozen hash brown potatoes ( 4  1/2 cups)

– 2/3 cups ( 1/2 of 10  3/4 oz can) condensed cream of chicken soup

– 1  8oz container of sour cream

– 1 cup (4 oz) shredded sharp chedder cheese

–  1/4 cup finely chopped onion

–  1/2 teaspoon of salt

– 1/4 teaspoon of ground black pepper

– 4 tablespoons of butter or margarine, melted

– 3 cups of Rice Chex cereal- crushed

Directions: 

1. Preheat oven to 350 degrees. Butter in shallow 1  1/2 quart  baking dish.

2. In large bowl, break up potatoes (don’t need to thaw).

3. Continue with soup, sour cream, cheese, onion, salt and pepper .

4. Add to potatoes and mix thoroughly.

5. Mix the ingredients into the baking dish.

6. Combine butter and Chex crumbs until evenly coated. Sprinkle over potato mixture.

7. Bake 50-55 minutes or until potatoes are tender. (Makes 6-8 servings)

* 2 dishes usually double the recipe and bake in a 9″ x 13″ baking dish

Snowball Cookies!

When people hear the word “Snowball”, they usually think of snow shaped in the form of a circle. However, these snowballs are meant to be eaten, not thrown. Snowball cookies are a classic, traditional cookie in my household for the holidays, especially Christmas. They are my favorite holiday cookie besides the classic chocolate chip cookie. They have a neutral, plain taste but a unique texture to them. They are so much fun to make during the holidays, especially with children. The recipe is fairly simple and easy, but may take some time. Below is the recipe and instructions for Snowball Cookies.

Ingredients:

    – 2 cups of all-purpose flour

    – 2 cups of finely chopped pecans/walnuts

    – 1/4 cup of sugar

    – 1 cup of Land o’ Lakes Butter, softened

    – 1 teaspoon of vanilla

    – Powered sugar

Instructions: 

1. Heat oven to 325 degrees.

2. Combine all ingredients except for powered sugar in large mixer bowl. Beat at low speed, until well mixed ( 2 to 3 minutes).

3. Once well mixed, take a large portion of the dough and place it in wax paper. (at least have two wax papers filled with dough)

4. Place it in the refrigerator for several hours, until it hardens and chills.

5. Take the dough out of the refrigerator and shape the dough into small rounded 1 inch balls. 

6. Next, place them 1  inch apart on a ungreased cookie sheet.

7. Bake for 18 to 25 minutes or until very lightly browned.

8. Let them cool for at least 2 minutes, but then start to roll them in the powered sugar while still warm. (Watch out for your fingers!)

9. Let them cool with the powered sugar before eating them.
